Ingredients

  • 12 thin slices deli roast beef
  • 6 slices process American cheese, quartered
  • 12 eggs

Nutritional Facts

2 eggs equals 238 calories, 15 g fat (7 g saturated fat), 452 mg cholesterol, 551 mg sodium, 3 g carbohydrate, 0 fiber, 22 g protein.

Directions

  1. Press one slice of beef onto the bottom and up the sides of each greased muffin cup, forming a shell. Arrange two cheese pieces in each shell. Break one egg into each cup.
  2. Bake, uncovered, at 350° for 20-25 minutes or until eggs are completely set. Yield: 6 servings (2 each).

"I think a great variation of this would be use thin sliced ham then add a cooked bacon slice rounded on Inside add then Mexican shred Sargento cheese then scrambled egg whites mixed with red and green peppers and onion cook til done then add pico on top of each w lil sprinkle of parsley"

"Haven't tried this version, but make mine w/sweet sliced ham, salso, eggs and cheese-sometimes scramble the egg sometimes use it whole. You can vary the fillings and they are all good!"

"Wow easy to make! It's like poached eggs in the oven. Very tasty, serve with toast, fruit and voila'... breakfast in a dash. If you like soft poached leave in oven for about 15-20 minutes, 25 minutes for hard poached. I could see skipping the cheese and making a hollandaise sauce to put over before serving."

"Made this Christmas morning for an easy breakfast. Used thin ham slices and pepperjack cheese slices. They were easy, clean up was simple and everyone liked them! Will definitely make these again!"
