"I would probably cook the rice a little longer and use fresh tomatoes as well next time. Great for a quick fix!"

"Loved how easy it was and it paired well with the Cajun Perch we were having. Could not find enchilada sauce packet at the store so I just subbed a faijta seasoning packet. Seemed to work okay. Next time, I may play around w/ that though and do a comb seasoning with a tiny bit of taco sauce. I used Pace Med Picante, our fave. Also, just threw it all in a microwave dish and microwaved for 8 min. Seemed to work fine that way!"
