Ingredients

  • 1 pound fresh asparagus, trimmed
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

1 serving equals 43 calories, 4 g fat (trace saturated fat), 0 cholesterol, 154 mg sodium, 2 g carbohydrate, 1 g fiber, 1 g protein. Diabetic Exchanges: 1 vegetable, 1/2 fat.

Directions

  1. Place the asparagus on an ungreased baking sheet. Drizzle with oil. Sprinkle with salt and pepper; turn to coat. Bake at 425° for 10-15 minutes or until tender. Yield: 4 servings.

"The asparagus turned out tasty and tender! After removing it from the over, I drizzled some melted butter on top and added a dash of garlic salt. My whole family, including the kids, thought this recipe was delicious."
