Easy Roast Beef Roll-Ups Recipe

"You can't beat these flavorful sandwiches seasoned with salsa," promises Susan Scott of Asheville, North Carolina. "Serve them with a green salad and tortilla chips for a cool dinner on a hot summer evening."
TOTAL TIME: Prep/Total Time: 15 min. YIELD:10 servings

Ingredients

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup salsa
  • 10 flour tortillas (8 inches), room temperature
  • 1 pound thinly sliced cooked roast beef
  • 10 large lettuce leaves
  • Additional salsa

Directions

  • 1. Combine sour cream, mayonnaise and salsa; spread over tortillas. Top with roast beef and lettuce. Roll up tightly and secure with toothpicks; cut in half. Serve with salsa. Yield: 10 servings.

"My family loved these. I have made exactly as is, and have also made with sliced turkey and sliced chicken - LOVE these all ways. I warm the tortillas slightly before rolling, then wrap in plastic wrap until ready to serve and they hold up beautifully!"

"Maybe it's because I'm an Anglo and don't know anything about tortillas, but when I made these for a church function, the tortillas all broke as I rolled them up. I didn't have time to make something else, so I took them anyway, expecting to bring most of them back. Lo and behold, they were all eaten up! The rest of the ingredients were very tasty, but I still need to solve the tortilla problem. Maybe I'll just use spongy white bread with the crusts cut off and rolled out a little, then filled and rolled."
