  • 4 cups fresh blueberries
  • 2 cups sugar
  • 1 package (3 ounces) lemon gelatin

  1. In a large saucepan, slightly crush 2 cups of blueberries. Add remaining berries and sugar, mix well. Bring to a boil, stirring constantly. Remove from the heat; stir in gelatin until dissolved. Pour hot jam into jars or containers. Cover and cool. Refrigerate. Yield: 4 half-pints.

"I might make this with a little less sugar next time around, but overall it was delicious. If you're like me and haven't made a gelatin jam before, just a heads-up that it does take awhile to set - I made it in the afternoon, and it was still liquidy when I went to bed! By the time I woke up in the morning, though, it was ready to go."
