Easy Grilled Squash Recipe
This is one of my favorite ways to use butternut squash, which I love not just for its flavor but also because it's full of vitamin A. I usually make this when I am grilling steak or chicken. —Esther Horst, Monterey, Tennessee
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 small butternut squash, peeled and cut lengthwise into 1/2-inch slices
- 1. In a small bowl, combine the oil, garlic, salt and pepper. Brush over squash slices.
- 2. Grill squash, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until tender. Yield: 4 servings.
2 slices equals 178 calories, 10 g fat (1 g saturated fat), 0 cholesterol, 156 mg sodium, 23 g carbohydrate, 7 g fiber, 2 g protein.
