Ingredients

  • 1 package yellow cake mix (regular size)
  • 1 egg
  • 1/2 cup 2% milk
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1/2 cup chopped pecans

Nutritional Facts

117 calories: 1 slice, 4g fat (1g saturated fat), 9mg cholesterol, 145mg sodium, 20g carbohydrate (12g sugars, 0g fiber), 1g protein .

Directions

  1. In a large bowl, combine the cake mix, egg and milk. Add bananas; beat on medium speed for 2 minutes. Stir in pecans.
  2. Pour into two greased 8-in. x 4-in. loaf pans. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Yield: 2 loaves (12 slices each).

"Very nice flavor. My loaves did not rise more than about 2 1/2 inches, so next time I may use smaller pans or put it all into one pan. I did use blueberries in place of nuts, so that may have affected the result. But, for a fast and tasty bread- it is worth making"

"This is such a great and easy recipe. It definitely makes a great base to play with. I made it today with walnuts instead of pecans. I added in two tablespoons of flaxseed mill, 1 teaspoon of cinnamon, and an extra banana. Then I baked it in a bundt pan instead of the two loaves. It turned out great. The flaxseed is so healthy for you and adds a nice nutty flavor. It also makes it a bit more brown and a little less yellow."

"I think this recipe had a great taste but....I don't know why it was crumbly when it was cut .It was very moist. maybe because I used skim milk instead of 2% has anyone else have a problem?"
