Easy Banana Nut Bread Recipe

Easy Banana Nut Bread Recipe

A yellow cake mix streamlines assembly of this moist golden bread. I searched a long while for a banana bread that was easy to make. This one takes no time at all, and makes two loaves. —Marie Davis, Pendleton, South Carolina
TOTAL TIME: Prep: 10 min. Bake: 40 min. + cooling YIELD:24 servings

Ingredients

  • 1 package yellow cake mix (regular size)
  • 1 egg
  • 1/2 cup 2% milk
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1/2 cup chopped pecans

Directions

  • 1. In a large bowl, combine the cake mix, egg and milk. Add bananas; beat on medium speed for 2 minutes. Stir in pecans.
  • 2. Pour into two greased 8-in. x 4-in. loaf pans. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Yield: 2 loaves (12 slices each).

"Quick & easy. I added two additional bananas and one additional egg, as did previous reviewers for more banana taste. The texture is more like cake than bread, but it's a good recipe."

"This was fast, easy and very tasty. My family enjoyed it so much. I followed the recipe exactly and both loaves rose as they should with a nice banana flavor. It's not a "poor replica" as a reviewer in 2013 remarked..."

"Very nice flavor. My loaves did not rise more than about 2 1/2 inches, so next time I may use smaller pans or put it all into one pan. I did use blueberries in place of nuts, so that may have affected the result. But, for a fast and tasty bread- it is worth making"

topping of butter, brown sugar & cinnamon & nutmeg to top."

"I agree about adding more banana for a stronger flavor. Has the right amount of sweetness . I used my cupcake tins and shortened the bake time."

"This was too cakey, hardly had any banana flavor, fell apart when you cut it. This person should really take the time to make a banana bread from scratch, Its sooo much better than this poor replica."

"This is such a great and easy recipe. It definitely makes a great base to play with. I made it today with walnuts instead of pecans. I added in two tablespoons of flaxseed mill, 1 teaspoon of cinnamon, and an extra banana. Then I baked it in a bundt pan instead of the two loaves. It turned out great. The flaxseed is so healthy for you and adds a nice nutty flavor. It also makes it a bit more brown and a little less yellow."

"Very good! I added 1tsp cinnamon to the batter and it was great. I also added a streusel topping, but I don't think it really needed it. It was sweet enough as it was! I cooked my second batch for only 38min so that it was a little bit softer in the middle they way I like it. Very easy!"

"Marie, I thank you so very much for this recipe! I've put it to use and it has been so helpful to me! I DID make some modifications to the recipe by adding 1 tsp. vanilla extract and 1/2 cup chocolate chips plus I sprinkled cinnamon-sugar over the top of the batter and swirled it through for a marbled pattern. All in all, it came out really nicely! Thank you for sharing your recipe with Taste of Home!
