Down-Home Hush Puppies

Ingredients

1 cup cornmeal

1 cup self-rising flour

1-1/2 teaspoons baking powder

1/2 teaspoon salt

1 large onion, chopped

2 jalapeno peppers, seeded and diced

1/4 cup sugar

1 large egg

1 cup buttermilk

Canola oil
Directions

In a large bowl, combine the first 7 ingredients. Add egg and buttermilk; stir just until moistened. Let stand at room temperature for 30 minutes. Do not stir again.

In an electric skillet or deep fryer, heat 2-3 in. oil to 375°. Drop batter by rounded tablespoonfuls, a few at a time, into hot oil. Fry until golden brown, about 1-1/2 minutes on each side. Drain on paper towels.
