Double-Decker Banana Cups Recipe

In Calgary, Alberta, Patricia Kinsella prepares these petite parfaits by layering a vanilla pudding mixture with sliced bananas and graham cracker crumbs. They make a speedy dessert or sweet snack.
TOTAL TIME: Prep/Total Time: 20 min. YIELD:4 servings

Ingredients

  • 1 cup cold fat-free milk
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 cup reduced-fat whipped topping
  • 1 cup thinly sliced firm bananas
  • 4 teaspoons graham cracker crumbs
  • 4 maraschino cherries with stems

Directions

  • 1. In a bowl, whisk together milk and pudding for 2 minutes. Fold in whipped topping. Refrigerate for at least 5 minutes.
  • 2. Divide half of pudding mixture among four dessert dishes. Top with half of the banana slices and remaining pudding mixture. Sprinkle with crumbs. Top each with the remaining banana slices and garnish with a cherry. Serve immediately. Yield: 4 servings.

"I already make this dessert in a 9x13 pan, but I add crushed pineapple with the layer of banana and sometimes add coconut to the whipped cream. I use cooked vanilla pudding instead of instant.. (works better with the pineapple) My co-workers love it"

"Besides delicious, this is a kid-friendly recipe. I made something very similar to this several times with my grandkids and with my niece and nephew when they were all younger. I let them decide if they wanted the fat-free cool whip separate or mixed in. They used my Pampered Chef crinkle cutter....no plug intended, but now you know for sure what it is....to slice the bananas. Then....and they liked this part!...we put a few reduced-fat vanilla wafers in a sandwich bag and they took turns smacking it with the smooth side of the meat tenderizer hammer to make crumbs to sprinkle on top. We also used strawberries once instead of cherries. Everyone wanted seconds! Thanks for sharing!"
