Double-Decker Banana Cups Recipe
- 1 cup cold fat-free milk
- 1 package (3.4 ounces) instant vanilla pudding mix
- 1 cup reduced-fat whipped topping
- 1 cup thinly sliced firm bananas
- 4 teaspoons graham cracker crumbs
- 4 maraschino cherries with stems
- 1. In a bowl, whisk together milk and pudding for 2 minutes. Fold in whipped topping. Refrigerate for at least 5 minutes.
- 2. Divide half of pudding mixture among four dessert dishes. Top with half of the banana slices and remaining pudding mixture. Sprinkle with crumbs. Top each with the remaining banana slices and garnish with a cherry. Serve immediately. Yield: 4 servings.
3/4 cup: 193 calories, 2g fat (2g saturated fat), 1mg cholesterol, 350mg sodium, 40g carbohydrate (0 sugars, 1g fiber), 3g protein. Diabetic Exchanges: 2 starch, 1/2 fruit.

"Besides delicious, this is a kid-friendly recipe. I made something very similar to this several times with my grandkids and with my niece and nephew when they were all younger. I let them decide if they wanted the fat-free cool whip separate or mixed in. They used my Pampered Chef crinkle cutter....no plug intended, but now you know for sure what it is....to slice the bananas. Then....and they liked this part!...we put a few reduced-fat vanilla wafers in a sandwich bag and they took turns smacking it with the smooth side of the meat tenderizer hammer to make crumbs to sprinkle on top. We also used strawberries once instead of cherries. Everyone wanted seconds! Thanks for sharing!"
