Diploma Sandwiches Recipe

Diploma Sandwiches Recipe

Fun for a graduate's party, these easy sandwiches can be made ahead and chilled. Thinly sliced ham, turkey, beef and cheese are other options for the filling. I've also used halves of 6-inch tortillas to make smaller "diplomas." —Sue Ross, Casa Grande, Arizona

"For a vegetarian filling, I used cream cheese mixed with finely diced carrots, celery, onion, red & green peppers, chives, and parsley. I also used flour tortillas rather than bread, and just trimmed the edges. They were the hit of the party!"
