Curry-Apple Turkey Loaf Recipe

Ingredients

  • 2 cups soft bread crumbs
  • 1 medium apple, finely chopped
  • 1 cup finely chopped fresh mushrooms
  • 1 small red onion, finely chopped
  • 2 egg whites, lightly beaten
  • 1 egg, lightly beaten
  • 1 to 2 teaspoons curry powder
  • 1 teaspoon salt
  • 1 pound lean ground turkey
  • TOPPING:
  • 2 tablespoons butter
  • 2 medium apples, finely chopped
  • 1 small red onion, finely chopped
  • 1/2 cup unsweetened apple juice
  • 1 teaspoon curry powder
  • 1/4 teaspoon salt

Directions

  • 1. In a large bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. Pat into a greased 9-in. x 5-in. loaf pan.
  • 2. Bake, uncovered, at 350° for 50-60 minutes or until no pink remains and a thermometer reads 165°.
  • 3. In a small saucepan, melt butter. Add the remaining topping ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until apples and onion are tender.
  • 4. Let meat loaf stand for 5-10 minutes before slicing. Serve with warm topping. Yield: 6 servings.
