Ingredients

  • 2 cups soft bread crumbs
  • 1 medium apple, finely chopped
  • 1 cup finely chopped fresh mushrooms
  • 1 small red onion, finely chopped
  • 2 egg whites, lightly beaten
  • 1 egg, lightly beaten
  • 1 to 2 teaspoons curry powder
  • 1 teaspoon salt
  • 1 pound lean ground turkey
  • TOPPING:
  • 2 tablespoons butter
  • 2 medium apples, finely chopped
  • 1 small red onion, finely chopped
  • 1/2 cup unsweetened apple juice
  • 1 teaspoon curry powder
  • 1/4 teaspoon salt

Directions

  • In a large bowl, combine the first eight ingredients. Crumble turkey
  • over mixture and mix well. Pat into a greased 9-in. x 5-in. loaf
  • pan.
  • Bake, uncovered, at 350° for 50-60 minutes or until no pink
  • remains and a thermometer reads 165°.
  • In a small saucepan, melt butter. Add the remaining topping
