Curried Meat Loaf Recipe

This savory loaf has three things going for it: Extra color, out-of-the-ordinary taste and a wonderful aroma when it's baking. Plus, it's so easy!— Denise Kilbock, Balgonie, Saskatchewan
TOTAL TIME: Prep: 15 min. Bake: 1 hour YIELD:6-8 servings


  • 1 large egg, beaten
  • 1/3 cup milk
  • 1/2 cup dry bread crumbs or rolled oats
  • 1 garlic clove, minced
  • 1 to 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded carrots
  • 1 medium onion, chopped
  • 1-1/2 pounds lean ground beef


  • 1. Preheat oven to 350°. Combine first 10 ingredients. Add ground beef; mix well. Pat meat mixture into a 9x5-in. loaf pan. Bake until no pink remains, 60-75 minutes. Yield: 6-8 servings.

"This meatloaf has an interesting yet pleasant flavor. It didn't get glorious reviews from my family but we certainly found it to be tasty and a good alternative to traditional meatloaf. I would go toward the heavy side of the spice recommendations..."
