Curried Meat Loaf Recipe
- 1 large egg, beaten
- 1/3 cup milk
- 1/2 cup dry bread crumbs or rolled oats
- 1 garlic clove, minced
- 1 to 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded carrots
- 1 medium onion, chopped
- 1-1/2 pounds lean ground beef
- 1. Preheat oven to 350°. Combine first 10 ingredients. Add ground beef; mix well. Pat meat mixture into a 9x5-in. loaf pan. Bake until no pink remains, 60-75 minutes. Yield: 6-8 servings.
1 serving (1 each) equals 188 calories, 8 g fat (3 g saturated fat), 80 mg cholesterol, 262 mg sodium, 9 g carbohydrate, 1 g fiber, 19 g protein.
