Cucumbers with Dressing Recipe
- 1 cup mayonnaise
- 1/4 cup sugar
- 1/4 cup white vinegar
- 1/4 teaspoon salt
- 4 cups thinly sliced cucumbers
- 1. In a large bowl, mix first four ingredients; toss with cucumbers. Refrigerate, covered, 2 hours. Yield: 6 servings.
3/4 cup: 283 calories, 27g fat (4g saturated fat), 3mg cholesterol, 286mg sodium, 11g carbohydrate (10g sugars, 0 fiber), 0 protein.

"The dressing lasts a little over a week if keep chilled. You can keep adding more sliced cucumbers over the next few days as they get eaten up....the taste just gets better as the cucumbers draw out their juice into the dressing. THIS SHOULD BE MADE AT LEAST 1 TO 2 HOURS AHEAD FOR BEST RESULTSI add a small to medium red onion, sliced, then cut slices in half and separate. I also add about 2 stalks of celery chopped & about 1 scant teaspoon of celery SEED. It improves both the flavor and the look of the salad.Dill is also good in this. However I do not use that most of the time.If I make this for a crowd, there is always a few people who want the recipe. So I keep a few copies of the recipe printed up."
"This recipe brings back great memories. I make the sauce similarly but add slices tomatoes and onions. I'd make a little more sauce to compensate however letting it sit overnight makes for the most delicious vegetable salad. Ideally I use fresh garden tomatoes from home or the farmers market but the sauce does wonders either way. The tomatoes and onions add so much flavor to the sauce you just can't get enough of it."

"I am not a mayonnaise person, so in place of the mayonnaise, I'll use either nonfat plain yogurt or light sour cream or Ranch dressing. I used 2 Tbsp. sugar, 2 Tbsp. CIDER vinegar, 1/4 tsp. pepper, 1 tsp. salt, 1 thinly sliced yellow or white onion and 4 cups thinly sliced unpeeled cucumbers. This adaptation made a verytasty cucumber salad! "Recipes don't get much easier than this! I used light mayonnaise and rice vinegar and it didn't seem to affect the taste. I also added pepper as some other reviewers did. I think that next time I may substitute Splenda to see how that affects the taste. I took this to a party without having tried it first and guests pretty much cleaned it up. It was tasty and refreshing and fairly healthy when the recipe is modified. This one's a keeper!!"
"I, personally, didn't get to eat this because I don't generally like cucumbers and I wasn't eating sugar at the time, but I will take another stab at it. I served it at a dinner party and I think only two people tried it so maybe it doesn't taste so good or maybe it tastes good but looks unappealing- not sure."
