Cucumbers with Dressing Recipe
- 1 cup mayonnaise
- 1/4 cup sugar
- 1/4 cup white vinegar
- 1/4 teaspoon salt
- 4 cups sliced cucumbers
- In a large bowl, combine the mayonnaise, sugar, vinegar and salt. Add cucumbers; toss to coat. Cover and refrigerate for 2 hours. Yield: 6-8 servings.

I am not a mayonnaise person, so in place of the mayonnaise, I'll use either nonfat plain yogurt or light sour cream or Ranch dressing. I used 2 Tbsp. sugar, 2 Tbsp. CIDER vinegar, 1/4 tsp. each salt and pepper, 1 thinly sliced yellow or white onion and 4 cups thinly sliced unpeeled cucumbers. This adaptation made a very

Recipes don't get much easier than this! I used light mayonnaise and rice vinegar and it didn't seem to affect the taste. I also added pepper as some other reviewers did. I think that next time I may substitute Splenda to see how that affects the taste. I took this to a party without having tried it first and guests pretty much cleaned it up. It was tasty and refreshing and fairly healthy when the recipe is modified. This one's a keeper!!
