Cucumber Onion Dip Recipe

“Family members request this fast and flavorful dip often,” Judith Priglmeier assures from Aitkin, Minnesota. “We especially like it with baked potato chips, but it tastes great with any type of chip or cracker.”
TOTAL TIME: Prep/Total Time: 15 min. YIELD:12 servings


  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup finely chopped seeded peeled cucumber
  • 1/4 cup finely chopped onion
  • 2 tablespoons mayonnaise
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • Rye chips or crackers


  • 1. In a small bowl, beat the cream cheese, cucumber, onion, mayonnaise, salt and pepper until blended. Refrigerate until serving. Serve with rye chips or crackers. Yield: 1-1/2 cups.

"In Louisville, Kentucky we add a few drops of green food coloring and call it Benedictine. And then we eat it with chips and make it into sandwiches and it is good on a turkey sandwich. Love it! The food of childhood. Skip the pepper. That's just weird. With ruffles you could eat the whole thing all by yourself."

"This is great as a bagel spread!. . . Since I love to experiment...I tried to turn this into a salad...I substituted greek yogurt for the cream cheese. Put it a half a lemon's of juice, a handful of chopped mint..and cubed up 2 cucumbers, 2 plum tomatoes, a very small purple onion, a handful of fresh chives...... it was delicious."

"Chopped tiny, mixed twice in my mixer and rested several hours before serving. I was hoping it would be a little yummier. Sorry. A little salty even though I used kosher salt. It may get better in a day. Maybe it needs some lemon juice? Guests asked about it though, so they liked it."

"good, but i also modified it and used lays ruffle chips and it was a hit. i used 2 packages of cream cheese and i added a 1/2 container of small curd cottage chesse, i didnt use onions becuase my children do not like onion, it was a hit and very creamy."
