- 1 package (8 ounces) cream cheese, softened
- 1/2 cup finely chopped seeded peeled cucumber
- 1/4 cup finely chopped onion
- 2 tablespoons mayonnaise
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- Rye chips or crackers
- In a small bowl, beat the cream cheese, cucumber, onion, mayonnaise, salt and pepper until blended. Refrigerate until serving. Serve with rye chips or crackers. Yield: 1-1/2 cups.

In Louisville, Kentucky we add a few drops of green food coloring and call it Benedictine. And then we eat it with chips and make it into sandwiches and it is good on a turkey sandwich. Love it! The food of childhood. Skip the pepper. That's just weird. With ruffles you could eat the whole thing all by yourself.

This is great as a bagel spread!. . . Since I love to experiment...I tried to turn this into a salad...I substituted greek yogurt for the cream cheese. Put it a half a lemon's of juice, a handful of chopped mint..and cubed up 2 cucumbers, 2 plum tomatoes, a very small purple onion, a handful of fresh chives...... it was delicious.
would be better on sandwiches
