Cucumber Chicken Salad Sandwiches Recipe
- 1 cup cubed cooked chicken breast
- 1/3 cup chopped seeded peeled cucumber
- 1/4 cup fat-free mayonnaise
- 1/4 teaspoon salt
- 1/8 teaspoon dill weed
- 2 lettuce leaves
- 4 slices tomato
- 2 sandwich buns, split
- 1. In a small bowl, combine the first five ingredients. Place lettuce and tomato on bun bottoms; top with chicken salad. Replace bun tops. Yield: 2 servings.

"My husband doesn't care for celery, which is an ingredient that I usually put in my chicken salad. The cucumber is a great substitution to give the chicken salad great taste and texture. I alsothrew in some sliced green onion that I had one hand and I added the diced tomato as one reviewer suggested. I served this in a buttered croissant. We thought it was a delicious lunch and my husband is happy to take it to work for lunch tomorrow."
