"My husband doesn't care for celery, which is an ingredient that I usually put in my chicken salad. The cucumber is a great substitution to give the chicken salad great taste and texture. I alsothrew in some sliced green onion that I had one hand and I added the diced tomato as one reviewer suggested. I served this in a buttered croissant. We thought it was a delicious lunch and my husband is happy to take it to work for lunch tomorrow."

"Try using canned salmon inside a wheat pita bread. My sister and I tried this a few years ago, only we slice the cucumbers very thin and put them inside the pita first."

"This was great for lunch. I diced the tomatoes & mixed it in with the chicken mixture, & wraped it in the lettuce leaves to safe on calories & carbs."
