Ingredients

  • 4 cups torn romaine
  • 2/3 cup chopped tart apple
  • 2/3 cup walnut halves
  • 1/2 cup dried cherries
  • 1/3 cup prepared raspberry vinaigrette
  • 1/2 cup crumbled Gorgonzola cheese

3/4 cup equals 259 calories, 20 g fat (4 g saturated fat), 10 mg cholesterol, 290 mg sodium, 16 g carbohydrate, 3 g fiber, 5 g protein.

Directions

  1. In a large salad bowl, combine the romaine, apple, walnuts and cherries. Drizzle with vinaigrette. Sprinkle with cheese. Yield: 5 servings.

"Its hard to believe that only 3 people have rated this salad. I didn't have any lettuce so I did without and I couldn't find rasberry vinaigrette anywhere so I used balsamic vinegar. It was great as is and my husband loved it. This time I will use lettuce but I can't see how that will really improve it."

"This was a yummy quick salad to put together. If you added chicken to it, it would be a great entree salad! I made a few adjustments according to what I had on hand: dried cranberries for cherries, feta cheese for Gorgonzola, and red apples."
