Crunchy Fruit Coleslaw Recipe

This crunchy coleslaw from our Test Kitchen brings big taste and lots of appeal to the table. You’ll love the fresh, subtle tang of lemon.
TOTAL TIME: Prep/Total Time: 15 min. YIELD:6 servings

Ingredients

  • 4 cups coleslaw mix
  • 1 cup seedless red grapes, halved
  • 1 small apple, chopped
  • 3/4 cup mayonnaise
  • 1/3 cup lemon pie filling
  • 1 teaspoon cider vinegar
  • 1/4 teaspoon celery salt
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  • 1. In a large serving bowl, combine the coleslaw, grapes and apple. In a small bowl, combine the remaining ingredients; pour over coleslaw and toss to coat. Chill until serving. Yield: 6 servings.

"Too good to let go to waste. I'd pick up a package of Pepperidge Farm dessert cups and fill them with the Left over Pudding . dessert anyone. I bet it would also work well with those little sponge short cakes. Perfect size for a nice after dinner treat. And Layered desserts using crushed cookies or cake with some cool whip in-between would also work * Have fun and enjoy the Bonus *

"I MADE THIS RECIPE AND IT WAS VERY GOOD. I FOUND THE RECIPE IN A 2008 SIMPLE AND DELICIOUS MAGAZINE. THE PROBLEM I HAD WAS IT SAYS TO USE 1/3 CUP OF LEMON PIE FILLING AND I DIDN'T HAVE ANY SO I USED 1/3 CUP OF LEMON INSTANT DRY PUDDING MIX. IT TASTED REALLY GOOD BUT IT GOT KIND OF THICK SO I THINNED IT OUT WITH A LITTLE MILK. EVIDENTLY THEY MEANT TO USE LIKE THE CANS OF LEMON PIE FILLING THAT IS ALREADY MADE. ANYWAY IT TASTED GOOD AND THAT IS WHAT COUNTS.DONALEE2"
