Ingredients

  • 1-1/4 cups flaked coconut
  • 1 cup dried apricots, finely chopped
  • 2/3 cup chopped pecans
  • 1/2 cup fat-free sweetened condensed milk
  • 1/2 cup confectioners' sugar

1 ball equals 87 calories, 4 g fat (2 g saturated fat), 1 mg cholesterol, 19 mg sodium, 12 g carbohydrate, 1 g fiber, 1 g protein.

Directions

  1. In a small bowl, combine coconut, apricots and pecans. Add condensed milk; mix well (mixture will be sticky).
  2. Shape into 1-1/4-in. balls and roll in confectioners' sugar. Store in an airtight container in the refrigerator. Yield: 2 dozen.
