Crispy Buffalo Chicken Roll-Ups Recipe

These winning chicken rolls, with their crunchy cornflake crust, are so easy to fix but look like I fussed. My family and friends absolutely love them! —Lisa Keys, Middlebury, Connecticut
TOTAL TIME: Prep: 15 min. Bake: 30 min. YIELD:4 servings

Ingredients

  • 4 boneless skinless chicken breast halves (6 ounces each)
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup crumbled blue cheese
  • 1/4 cup hot pepper sauce
  • 2 tablespoons mayonnaise
  • 1 cup crushed cornflakes

Directions

  • 1. Preheat oven to 400°. Flatten chicken breasts to 1/4-in. thickness. Season with salt and pepper; sprinkle with blue cheese. Roll up each from a short side and secure with toothpicks.
  • 2. In a shallow bowl, combine pepper sauce and mayonnaise. Place cornflakes in a separate shallow bowl. Dip chicken in pepper sauce mixture, then coat with cornflakes. Place seam side down in a greased 11x7-in. baking dish.
  • 3. Bake, uncovered, 30-35 minutes or until chicken is no longer pink. Discard toothpicks. Yield: 4 servings.

"Great taste! Although, they were really messy when I tried to roll them up. I think next time I will just cut a pocket into the chicken breast to put the cheese in instead. But overall they tasted fantastic."

"This was so tasty and easy! I used Texas Pete hot sauce and also panko bread crumbs, because I didn't have corn flakes. My daughter, who loves buffalo chicken everything, was home from college for the week-end and loved it!!! Even my husband who does not like overly spicy commented how tasty it was! I had no problem dipping the roll-ups in the hot sauce and mayo (which I whisked together & was soupy enough) then into the panko crumbs. Cooked for 40 minutes & used thermometer! Awesome, love those quick and easy recipes that make it seem like I slaved over a hot stove for hours."

"Really good! I didn't have cornflakes, so I substituted panko breadcrumbs. Another reviewer said they were dry...try cutting down a bit on the baking time and test with a thermometer. Will definitely make these again."

"Awesome-easy, delicious, and a much healthier way to satisfy a craving for chicken wings. I used Raisin Bran instead of corn flakes because I didn't have any (and just picked out the raisins). I also used 1 triangle of Laughing Cow light Swiss per breast instead of blue cheese. I used Frank's buffalo sauce and low fat mayo. They weren't spicy, just had that buffalo essence...so even my husband who doesn't like spicy things thought they were delicious. Definitely a keeper!"

"Because of reviewers comments, I made half of the roll ups with blue cheese and the other ones with feta. We like both cheeses, but we would have liked these better with a slice of Colby-Jack cheese in each instead. The buffalo wing sauce had the right amount of zing, and the cornflaked exterior was nicely crunchy. Definitely a good choice when planning a meal for guests."

"I've made this several times as my whole family loves it, even my son who doesn't like hot stuff. The hot sauce you use makes or breaks it. Do not use Tabasco unless you want to set your tummy on fire. We have found that this is delicious with Texas Pete."

"Very good. My wife & I loved it! I would agree with other reviews that the hot sauce should be brushed on. We used gorgonzola instead of blue cheese. Also baked for 40 min. to make sure it was done. I know others have used bread crumbs, but the corn flakes worked really well-very crunchy."

"This one was a winner. My husband loved it and my 5 and 4 year olds actually asked for third helpings (even with the hot sauce). I used panko crumbs and sort of spread the hotsauce/mayo mixture over the chicken and then coated. Used Frank's Red Hot which (being from Buffalo) is an absolute staple for anything you would make like this. Would definitely make this again."

"My Husband and I are HUGE buffalo chicken wing fans. We followed the recipe except for the hot sauce and Corn Flakes. We used Frank's red hot for the hot sauce, Panko extra crispy bread crumbs for the coating and a little side of Bleu cheese for dipping. Great recipe and we have already made it twice. "This sounded good, but the outcome was BAD. First of all, what kind of "hot wing sauce" did the editors use that took this picture?! I used one of the best and adding mayo made the mixture too thick. Instead of dipping it in the mixture, it should've been 'brushed on'. Second, not enough 'corn flakes'. I needed 2 cups to successfully coat the chicken bundles.

Editors: Please be real about which recipes to pick, this was definately not a Winner."

"These were great! I saw the recipe a couple of months ago and have been contemplating it since. I have two young kids so I wasn't sure about the heat level for them. I finally tried it tonight; I scaled back on the hot sauce and used Feta cheese instead of Bleu, because that's what I had. Also used Panko b/c we're not cornflake people. The crunch is awesome and adds nice texture contrast to the chicken and cheese filling. I will definitely make this again, more than likely for company because it's so good!"

"I assembled everything in advance and refrigerated dish until I was ready to start dinner. I added 5 minutes to the maximum baking time. I also used Panko bread crumbs instead of the corn flakes and served it with a spicy corn and black bean salad. Huge hit at my dinner table!"
