Creamy Waldorf Salad Recipe

Things don't get much easier than preparing this pleasantly dressed fruit salad from Linda Stateler of Ottumwa, Iowa. Crunchy apples and nuts contrast nicely with juicy grapes and chewy raisins.

Ingredients

  • 1 large red apple, chopped
  • 1/2 cup halved seedless red grapes
  • 1/2 cup whipped topping
  • 1/4 cup raisins
  • 1/4 cup mayonnaise
  • 3 tablespoons coarsely chopped walnuts

One 3/4-cup serving (prepared with reduced-fat whipped topping and fat-free mayonnaise) equals 177 calories, 7 g fat (2 g saturated fat), 0 cholesterol, 142 mg sodium, 31 g carbohydrate, 3 g fiber, 2 g protein. Diabetic Exchanges: 1-1/2 fruit, 1 fat, 1/2 starch.

  1. In a large bowl, combine all the ingredients. Chill until serving. Yield: 3 servings.
