Creamy Tomato Tortellini with Sausage Recipe

No one will believe that just three ingredients make up this tomato sauce that tastes like it bubbled away all day on top of the stove. It's that good. —Jennifer Eggert, Scottsdale, Arizona
TOTAL TIME: Prep/Total Time: 25 min. YIELD:6 servings

Ingredients

  • 1 package (19 ounces) frozen cheese tortellini
  • 2 fully cooked Italian chicken sausage links (3 ounces each), sliced
  • 1 can (14-1/2 ounces) diced tomatoes with garlic and onion, undrained
  • 1 package (6 ounces) fresh baby spinach
  • 4 ounces reduced-fat cream cheese

Directions

  • 1. Cook tortellini according to package directions. Meanwhile, in a large nonstick skillet coated with cooking spray, cook and stir sausage over medium-high heat 4-5 minutes or until browned. Add tomatoes and spinach; cook and stir just until spinach is wilted. Stir in cream cheese until melted.
  • 2. Drain tortellini; add to sausage mixture. Toss to combine. Yield: 6 servings.

"Quick and easy! Instead of frozen tortellini, we used the bag stuff, which was only 12 oz. We liked a lot of sauce so did the full amount of sauce. I didn't do all the sausage though because it seemed like too much. Hubby and I loved it! Next time I will add more onion and garlic and maybe mix in some shredded parmesan!"

"This was good, but needed a little sonethin' somethin'. I added a few shakes of Jane's Krazy Salt seasoning, but it needed something else. Next time I'll add more sausage, and some fresh garlic. Also, maybe some Better 'n Boullion will do the trick. Just maybe 1/2 a teaspoon or so. I'll make it again, but needs a bit of tweaking to make it awesome. Enjoyed the recipe, though."

"Did I miss something? I can only see 2 ingredients for the sauce - diced tomatoes and cream cheese. The recipe description says there are 3 ingredients. Is it meaning that the sausage or spinach is part of the sauce? That doesn't sound right to me."

"I am so excited about this recipe! I made it last night in about 15 minutes and it was completely delicious. I substituted bow tie pasta for the tortellini and turkey kielbasa for the chicken sausage because that's what I had on hand. I also used frozen spinach, right out of the bag. Sooooooo yummy with a sprinkling of Parmesan cheese on top and some garlic bread. I will make this once a week! Love the sauce with cream cheese. Never thought of that for a pasta sauce!"

"Very easy recipe...like that I can keep all but the fresh spinach in my pantry and whip up with little head time. I did add baby bella mushrooms, an onion and some fresh basil to bulk up the recipe a bit. But the flavor was there even without those additions....the garlic canned tomatoes do the trick well!"

"I didn't have diced tomatoes- replaced with stewed. The 6 kids I fed were all happy and 2 were super picky. Before adding tortellini I put some aside for the Gluten free diet adult. I doubled the recipe and fed 2 adults, a hungry teenager and 5 kids with enough for 2-3 small lunches. It goes in the rotation!"

"The only substitution to this recipe that I made was replacing the sausage with turkey bacon. I was making this recipe for myself and didn't want to purchase a package of sausage for just 2 links. I had bacon already in the fridge. I enjoyed the recipe. It is easy to put together in a hurry and would be good for working parents who want a quick dinner on the table. I felt like there wasn't enough sauce for all 19 oz of the tortellini so I didn't add it all in. Also, for my liking, I added half the spinach. A whole 6 oz bag would be a lot of spinach in relation to the other ingredients. Use your own judgement and taste for that. Just be cautious adding all the pasta in; it may be on the dry side. I will definitely make again."

"This was great! I was tired after a long day and was just about to pick up pizza AGAIN when I realized I had all the ingredients for this at home. It tasted a lot like a restaurant recipe. I did sauté 1/4 of an onion with the sausage and threw in a little thyme and fennel in the sauce. I might try adding mushrooms next time just because we like them."
