Creamy Sweet Potatoes Recipe

I took my mother's delicious sweet potato casserole recipe and gave it a new twist by adding the tempting taste of orange-a fruit very abundant in our state. The flavors are wonderful together and make this dish a family favorite. —Norma Poole, Auburndale, Florida

Ingredients

  • 5 pounds sweet potatoes, peeled and cooked
  • 4 large eggs, lightly beaten
  • 1/2 cup orange juice
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • Dash salt
  • 1 cup miniature marshmallows

312 calories: 3/4 cup, 10g fat (5g saturated fat), 82mg cholesterol, 266mg sodium, 53g carbohydrate (41g sugars, 5g fiber), 4g protein .

Directions

  1. In a large bowl, mash sweet potatoes. Add eggs, orange juice, butter, sugar, vanilla, nutmeg and salt; mix well. Transfer to a greased 3-qt. baking dish.
  2. Bake at 350° for 35-40 minutes or until set. Top with marshmallows; return to oven until they just begin to puff and melt, about 5-10 minutes. Yield: 10-12 servings.

"This sounds so good. But I have a family that don't eat sweet potato except for me and one other. 10 to 12 servings is way to much. I wouldn't know how to cut it down for 2 of us.

I'm giving it one star because they require a star. It is not fair of me to judge something I have not tried."

"This recipe is one that my six now-grown children request every holiday! When a very dear friend of ours was dying of cancer 12 years ago, this delicious dish was the one thing he'd still eat & it was easy on his stomach. Been making it since it was published in 1993. The only change I make is to eliminate the marshmallows--it's perfect without them!"

"I've never been a big fan of sweet potatoes, but these I could enjoy. Orange, vanilla, nutmeg --you really get a burst of each of the flavors an d they taste so good with the sweet potatoes!"

"My Mother used to make this recipe. Since we live in Florida and have citrus trees, she would juice the oranges and save the rest of the orange and put the sweet potato mixture in the orange shells and bake them that way...Since fresh squeezed leaves orange in the peeling you would get pieces of orange with most bites. She also added pecans pieces to the mixture with half pecan pieces on top of the marshmallows."

"Made this for Thanksgiving and making it again for Christmas. I used brown sugar and added a bit of cinnamon. The addition of orange juice makes these sweet potatoes super good. The whole family loves them and this is the recipe I will use for holidays from now on."

"I was looking for a sweet potato dish that wasn't quite as sweet and calorie-laden as the recipe I've used in recent years. This looked tasty and easy and it hit the mark on both counts! The mix of orange juice, vanilla and nutmeg was perfect. It received positive reviews from our Thanksgiving guests, even though I completely forgot to sprinkle on the marshmallows at the end in the rush to get all of the other dishes on the table. It was still delicious!"

"This recipe is like my mom's too except I substituted the white sugar for dark brown sugar and only used 6 Tbsp of butter to cut out some of the fat. Great basic southern sweet potato recipe. I make this every Thanksgiving but use the brown sugar. And yes, I top it with roasted marshmallows."
