Creamy Italian Chicken Recipe

From Tallahassee, Florida, Maura McGee shares her recipe for tender chicken in a creamy sauce that gets fast flavor from salad dressing mix. Served over rice or pasta, it's rich, delicious and special enough for company.
TOTAL TIME: Prep: 15 min. Cook: 4 hours YIELD:4 servings

Ingredients

  • 4 boneless skinless chicken breast halves (4 ounces each)
  • 1 envelope Italian salad dressing mix
  • 1/4 cup water
  • 1 package (8 ounces) cream cheese, softened
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1 can (4 ounces) mushroom stems and pieces, drained
  • Hot cooked pasta or rice
  • Fresh oregano leaves, optional

Directions

  • 1. Place the chicken in a 3-qt. slow cooker. Combine salad dressing mix and water; pour over chicken. Cover and cook on low for 3 hours.
  • 2. In a small bowl, beat cream cheese and soup until blended. Stir in mushrooms. Pour over chicken. Cook 1 hour longer or until chicken is tender. Serve with pasta or rice. Garnish with oregano if desired. Yield: 4 servings.

"I did not put this in the crock pot, but I did use the ingredients as listed. First I browned the chicken in oil and then added the Italian dressing mixture and let it cook for about 8 minutes. I added the cream cheese mixture and cooked for another 15 minutes covered on med-low. It was delicious, but it was a little heavy for me. That's the only reason I did not give this one 5 stars."

"This goes into my "Guest Recipe" folder !! The only changes I made were to use 1/2 (16.oz) bottle of Italian Dressing, 1/2 package of cream cheese and cook for an additional 2 hrs. instead of 1.

Microwaving the soup and cream cheese a bit makes it easier to blend.
Simply outstanding."

"Love this! So easy to make and tastes great! It a nice crock pot recipe t0 put on later in day -incase you realize it is noon and you haven't thought of dinner yet!! "My family really enjoyed this dish. I can't have dairy, so I took out my piece of chicken after it cooked for 3 hours and then added some Tofutti dairy-free cream cheese. I used fresh mushrooms that were grilled the night before and seved it over rice with sugar snap peas. Delicious!"

"This is sooooo good! I made this for my dad's birthday and trusted the reviews. So glad I did. Everyone was impressed and wanted the recipe. They all went back for seconds even my super picky eight year old! I also have made this on the stove top and it was just as yummy! I cooked breasts first in fry pan w/half of italian mix, removed, and then mixed the rest of the ingredients in pan w/remaining itailian mix, and added the chicken back in(sliced), simmered for about 15 or so min. Served over noodles. Can't go wrong."

"I made this last night and it was good! My two year old twins devoured it and they don't eat much. This recipe is a winner just for that fact. All the kids did like it so it is a family friendly meal. I served this over noodles. I did use fat free cream cheese with 98% fat free cream of chicken soup. I don't know if this changed the flavor or texture from the original recipe but we like it enough that we will be making this again. Thanks."
