Creamy Cucumber Salad Recipe
"When cousins visited from Russia, they made us a meal that included this wonderful vegetable salad," relates Rhonda Egler of Mooresville, Indiana. "Its refreshing flavor goes over well at family get-togethers."
- 1 medium cucumber, diced
- 2 plum tomatoes, diced
- 4 green onions with tops, sliced
- 1/2 cup sour cream
- 1/4 teaspoon celery salt or salt-free seasoning blend
- 1/8 teaspoon pepper
- 1. Combine all ingredients in a bowl. Refrigerate until serving. Yield: 4 servings.
3/4 cup: 78 calories, 6g fat (4g saturated fat), 7mg cholesterol, 14mg sodium, 5g carbohydrate (3g sugars, 2g fiber), 2g protein.
