Cranberry Gumdrops Recipe

This unique treat combines two holiday favorites— the tangy flavor of cranberry and a sweet chewy candy. I've made them for years. They're popular with all ages.

Ingredients

  • 2 envelopes unflavored gelatin
  • 1/2 cup cold water
  • 1 can (16 ounce) jellied cranberry sauce
  • 2 cups sugar, divided
  • 3 packages (3 ounces each) raspberry gelatin
  • Additional sugar, optional

1 serving (2 each) equals 85 calories, 0 fat (0 saturated fat), 0 cholesterol, 11 mg sodium, 21 g carbohydrate, trace fiber, 1 g protein.

Directions

  1. In a saucepan, sprinkle unflavored gelatin over water; let stand for 2 minutes to soften. Add cranberry sauce and 1 cup of sugar; cook over low heat until sauce is melted and sugar is dissolved, about 10 minutes. Whisk until smooth.
  2. Remove from the heat and add raspberry gelatin; stir until completely dissolved, about 3 minutes. Pour into an 8-in. square dish coated with cooking spray. Cover and let stand at room temperature for 12 hours or overnight (do not refrigerate).
  3. Cut into 1-in. squares; roll in remaining sugar. Place on baking sheets; let stand at room temperature for 3 hours. Turn pieces over and let stand 3 hours longer. Roll in additional sugar if desired. Store in an airtight container at room temperature. Yield: about 5 dozen.

Mine did not ooze, but the consistency was more like Jigglers than gumdrops. Delicious, but I thought they would be just a bit chewier. They are also VERY sweet. I took a batch to church for the social time, and they were quite the hit. To the point that some of the folks begging me for the recipe seemed a little over-enthusiastic and extra peppy... I think I sugar-shocked the congregation! This is definitely not a recipe for diabetics!

This is a great recipe. My kids will not eat cranberries until I made this. Now at Thanksgiving I always have to make this recipe for them. They think of it as a treat.

This recipe sounds good to me, but I was wondering if they could be molded in plastic candy molds instead of cutting them into squares? Would the mixture be too warm for the molds? What about cooling slightly before pouring into molds, would it hurt the quality?

I made this recipe and it was absolutely a hit! I am taking these to our annual cookie/candy exchange. I did not experience oozing with the recipe at all (maybe they need additional drying time?). Great recipe!

I also had the problem of oozing. I fixed it by taking the squares and putting them on a wire rack and letting them dry out for 2 days. It made them more like gummy bears and stopped the oozing. Everyone at work loved them.
