Cowboy Casserole Recipe

This quick and creamy Tater Tot bake is great comfort food, especially on a cold night. —Donna Donhauser, Remsen, New York
TOTAL TIME: Prep: 15 min. Bake: 20 min. YIELD:2 servings

Ingredients

  • 1/2 pound lean ground beef (90% lean)
  • 1 can (8-3/4 ounces) whole kernel corn, drained
  • 2/3 cup condensed cream of chicken soup, undiluted
  • 1/2 cup shredded cheddar cheese, divided
  • 1/3 cup 2% milk
  • 2 tablespoons sour cream
  • 3/4 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 2 cups frozen Tater Tots

Directions

  • 1. Preheat oven to 375°. In a large skillet, cook beef over medium heat until no longer pink. Stir in the corn, soup, 1/4 cup cheese, milk, sour cream, onion powder and pepper.
  • 2. Place 1 cup Tater Tots in a greased 3-cup baking dish. Layer with beef mixture and remaining Tater Tots; sprinkle with remaining cheese. Bake, uncovered, 20-25 minutes or until bubbly. Yield: 2 servings.

"I always double this & cook ground beef with onions & garlic... Sometimes peppers & mushrooms. I also use a can of condensed bean & bacon soup & a can of cream of mushroom soup. Also bake at 400 for about 30 minutes as we like the tots crispy!"

"I love this recipe I make it for pot lucks but this past week I made it for a cabin of 18 and I read all the bland comments and thought I can't take that. So I got creative I put garlic in it of course. Then fiesta corn more sweet corn, kidney beans, black beans yeah it's a lot of extras but it was probably a triple recipe and probably weighted 15 lbs lol I couldn't carry it. But it fed a lot of folks and even got a call after we got home did you have any extras, why yes I had also made my daughter a pan while she was home for the weekend and of course she didn't eat it lol SUPER SUCCESS!!!!!!"

"For a less mushy casserole I fried my taters and instead of tater tots I used Baby Cakes Mini Hasbrowns by McCains. Either way the fry gives it more crunch. In addition to that, for extra flavor I added 2 tsp garlic, 1 tsp salt, 2 tbsp onion powder, 2 tbsp paprika and upped the amount of pepper to 1 tsp. For extra kick I added 1/8 tsp chilli powder."

"Made this recipe with a few "tweaks" for dinner this evening. I omitted the sour cream (just didn't have any,) used 1 lb beef, full can of Cream of Mushroom, no milk, added chopped onions and bell peppers to the grown beef when it was browning, omitted the onion power and pepper. "Yummy. I doubled the recipe and it fit fine in a 9x13" pan. Doubling it allowed me to use one lb. ground meat (I used turkey), one can of soup, one bag tater tots and one 16 oz. bag frozen corn... much easier than having leftover ingredients cluttering up my fridge/freezer. I added some leftover black beans and cut down on the sodium by using frozen corn and "healthy" soup and it still tasted fine. I think the addition of some diced tomatoes would be good. Overall we liked it very much and will definitely make it again!"

I do use half cream of chicken soup, and half cream of mushroom soup + add onion and garlic to the ground beef when browning. Delish! "too many Calories, too many grams of Fat. "I didn't think that this had a lot of flavor. I added 1/3 cup of chopped onions and 4 cloves of garlic, and 1 tsp of pepper, and still, it had the salty bland casserole taste. The predominant flavor was the tater tots. It is better than the standard green bean tater tot casserole though."

"Sounds like the one I make only the tater tots are only on top. I brown the hamberger with onion and garlic. Drain, Spread in 8 by 8 pan, pour chicken soup over hamberger then add the cheese, then place the tatertots on top. Bake until tatertots are golden brown. After it comes out of the oven, let it sit for a few minutes and it should not be runny when you cut it."

"I liked this - it was easy and had a good flavor - but my 5 year decidedly did not. I made as the recipe directed, except I seasoned the meat with Adobo instead of pepper and onion powder. I would probably layer all the tater tots on top if I were to make it again and maybe add some onions and peppers for some added veggies."

"I used venison that had been cut for stew meat instead of ground beef. It was delicious!

We are a family with two teenage boys and one ten year old boy so I definitely doubled the ingredients. Based on some of the previous reviews I did NOT double the milk. And I probably used more than double the cheese as I didn't really measure I just added until it looked right.
Our store was out of regular Tater Tots so I used the onion variety. No one complained ! I also used frozen corn instead of canned. Baked it up in a 9" x 13" for about 40 minutes.
Will definitely make again."
