Cowboy Casserole Recipe
- 1/2 pound lean ground beef (90% lean)
- 1 can (8-3/4 ounces) whole kernel corn, drained
- 2/3 cup condensed cream of chicken soup, undiluted
- 1/2 cup shredded cheddar cheese, divided
- 1/3 cup 2% milk
- 2 tablespoons sour cream
- 3/4 teaspoon onion powder
- 1/4 teaspoon pepper
- 2 cups frozen Tater Tots
- 1. Preheat oven to 375°. In a large skillet, cook beef over medium heat until no longer pink. Stir in the corn, soup, 1/4 cup cheese, milk, sour cream, onion powder and pepper.
- 2. Place 1 cup Tater Tots in a greased 3-cup baking dish. Layer with beef mixture and remaining Tater Tots; sprinkle with remaining cheese. Bake, uncovered, 20-25 minutes or until bubbly. Yield: 2 servings.
1 serving equals 714 calories, 38 g fat (15 g saturated fat), 120 mg cholesterol, 1,675 mg sodium, 56 g carbohydrate, 6 g fiber, 37 g protein.

"For a less mushy casserole I fried my taters and instead of tater tots I used Baby Cakes Mini Hasbrowns by McCains. Either way the fry gives it more crunch. In addition to that, for extra flavor I added 2 tsp garlic, 1 tsp salt, 2 tbsp onion powder, 2 tbsp paprika and upped the amount of pepper to 1 tsp. For extra kick I added 1/8 tsp chilli powder."

I omitted the sour cream (just didn't have any,) used 1 lb beef, full can of Cream of Mushroom, no milk, added chopped onions and bell peppers to the grown beef when it was browning, omitted the onion power and pepper. "Yummy. I doubled the recipe and it fit fine in a 9x13" pan. Doubling it allowed me to use one lb. ground meat (I used turkey), one can of soup, one bag tater tots and one 16 oz. bag frozen corn... much easier than having leftover ingredients cluttering up my fridge/freezer. I added some leftover black beans and cut down on the sodium by using frozen corn and "healthy" soup and it still tasted fine. I think the addition of some diced tomatoes would be good. Overall we liked it very much and will definitely make it again!"

I do use half cream of chicken soup, and half cream of mushroom soup + add onion and garlic to the ground beef when browning. Delish! "Sounds like the one I make only the tater tots are only on top. I brown the hamberger with onion and garlic. Drain, Spread in 8 by 8 pan, pour chicken soup over hamberger then add the cheese, then place the tatertots on top. Bake until tatertots are golden brown. After it comes out of the oven, let it sit for a few minutes and it should not be runny when you cut it."
