I came across this recipe a few years ago around Thanksgiving. The golden, juicy hens and festive rice stuffing make a memorable feast for two. Best of all, we're not eating leftovers for days on end.—Kathy Meyer, Kenosha, Wisconsin
Stuffed with a succulent combination of wild rice, mushrooms and dried cranberries these golden hens are sure to become a special-occasion entree in your home. "They're a wonderful change of pace from traditional turkey," writes Nancy Horsburgh of Everett, Ontario.
Since trying this stuffing recipe from my sister, I haven't made any other kind. It's so moist and tasty. When a big bowlful starts circulating around the table, happy holiday smiles get even bigger!

I first served these hens at Thanksgiving one year when only a few of us gathered to celebrate the holiday. They're so yummy they often grace our table throughout the year. The wild rice stuffing offers a flavor my family always enjoys. –Jenny Holliday, Roanoke, Alabama
My original dressing seems to satisfy people who prefer dressing made with bread and those who prefer a rice variety. It includes both, plus spinach and a hint of orange for unexpected surprises. Leftover dressing (if there is any!) reheats well.
