I adjusted the original recipe for this cold, creamy salad to better suit my tastes. The cilantro comes through nicely...while green chilies and chili powder add a little kick and a hint of color.

Country Woman's Test Kitchen developed this pretty, refreshing salad, which pairs well with roasted meats and poultry. The avocado, red onion and garlic-mustard dressing complement the tart fruit beautifully.
I came across this recipe while spending a winter in Arizona. Now as soon as we return home each spring, our grandchildren are waiting for me to make these refreshing salads. To save time, bake the salad shells in the morning. Cool: store in an airtight container.Betty Johnson, Olympia, Washington
WHEN I had a large vegetable garden, I had fun creating recipes, depending on what was ready for picking.
I've found this salad complements meat or fish entrees and can be served even if you have another vegetable as a side dish.

I’m new to jicama, a root vegetable that’s popular in Mexican and Southwestern cooking. It lends plenty of crunch to this no-fuss salad and blends well with the other zippy ingredients.Deborah Williams, Peoria, Arizona

This hearty main-dish salad, sent in by Iola Egle of Bella Vista, Arizona, makes a great cool-weather entree. It's colorful, delicious and filled with the kind of heat that’s great after a chilly football game or hike. Best of all, you can have it on the table in half an hour!
Baby spinach, mandarin oranges and avocado are teamed in this refreshing springtime salad from Margaret O'Bryon of Bel Air, Maryland. You can also substitute fresh orange slices for the mandarin oranges.
I assemble this salad ahead of time and add the corn chips and salad dressing just before serving. You can adapted this salad by adding kidney beans, various cheeses and croutons or crunched tortillas instead of corn chips.Tabitha Allen, Cypress, Texas
