I used to have a catering business, and my specialty was comfort food. I once needed a gluten-free meatloaf and my clients went nuts over this. I often use an 8x8 pan or a loaf pan, but a muffin tin really cuts the cooking time. —Vangie Panagotopulos, Moorestown, New Jersey
"Our family and friends love this no-fail recipe. It's a staple in our home." A topping of bacon adds wonderful flavor to this moist meat loaf. The brown sugar ketchup glaze takes it to a whole new level. Yum! —Zac Freeman and Paige Ponder, Chicago, Illinois
Our two girls refused to eat meat loaf. But when I modified my recipe by adding pizza sauce to the meat mixture and covering the loaf with sauce and mozzarella cheese, they couldn't get enough! My husband and I enjoy it, too!—Loy Acerra Crane, Jackson, Tennessee
We love Grandma's version of meat loaf so much that we have it at Thanksgiving, Christmas and Easter—the holidays wouldn't be the same without it! It's just as good the next day, as a cold sandwich.—Joan Frey, Spencer, Ohio
For this fast family fare, Candace thaws a portion of Ground Beef mix, shapes it into a loaf and covers it with tomato sauce and bacon. Since there's little preparation before popping it in the oven, this main dish is ideal for busy weeknights.
"My husband, Wayne, asks for this meat loaf all the time," reports Edna Lauderdale of Milwaukee, Wisconsin. "We like it spicy, so we use hot sausage rather than mild. Slices are terrific drizzled with ketchup, served with mashed potatoes and gravy, or in meat loaf sandwiches the next day."
IT'S FUN to make miniature meat loaves instead of one big loaf...and they cook up quickly in a skillet rather than in the oven.
The unique combination of flavors gives the ground beef zip. This recipe is one of my old standbys for a speedy supper.
