Rhonda Butterbaugh shares the recipe for a fruity gelatin dessert that's a summertime staple at her home in Weatherford, Oklahoma. "I usually prepare it the day before I need it," she writes. "It disappears really fast."
I love the sweet-salty flavor of this pretty layered dessert. Sliced strawberries and gelatin top a smooth cream cheese filling and crispy pretzel crust. I think it's best when eaten within a day of being made.
"As a child, I asked my mother to make this colorful gelatin for birthdays," recalls Lorna Northcutt of Gladstone, Oregon. "Now I fix it for my husband and son. You can leave out the marshmallows if you prefer," she adds.
This recipe from my sister-in-law was a big hit at our parents' 50th wedding anniversary. Guests always seem to enjoy the fluffy texture and the tangy flavor from the sliced berries.
