I don't live in the country, but I love everything about it—especially good old-fashioned home cooking! Every year, you'll find me at our County Fair, entering a different recipe contest. I find new recipes everywhere—especially in my large cookbook collection. This toffee, however, comes from the "heart". It's been a favorite in my family since I was a little girl!
This toffee has been a Christmas favorite in our family for over 30 years now. My interest in cooking also reaches back far—to the preparation of those big threshing-day and family dinners when I was growing up in Iowa.
I paired the simple Trefoils shortbread cookie with a layer of thick toffee, topped with chocolate and toasted almonds. I love how the Trefoils give this bark a toothsome bite, and they soaked up the toffee to form a chewy layer between cookies and chocolate. This candy was a huge hit with my family and friends!
