County Fair Pie
TOTAL TIME: Prep: 15 min. Bake: 1 hour + cooling
YIELD: 8 servings.
This quick and easy recipe is one of my family's favorites. I've taken it to lots of potlucks and have been asked for the recipe many times.
Ingredients

Dough for single-crust pie

1 cup butter, softened

1 cup sugar

1/2 cup all-purpose flour

2 large eggs

1 teaspoon vanilla extract

1 cup coarsely chopped walnuts

1 cup semisweet chocolate chips

1/2 cup butterscotch chips
Directions

Preheat oven to 325°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling.

In a large bowl, beat butter, sugar, flour, eggs, and vanilla until well blended. Stir in nuts and chips; pour into crust.

Bake until golden brown, about 1 hour. Cool on a wire rack. Store leftovers in the refrigerator.
