When my family wants a down-home dinner, this is the recipe they usually request. Bacon in patties gives a subtle smoky flavor, while tomato gravy adds a little zip.—Bernice Morris, Marshfield, Missouri

Ingredients

  • 1 pound ground turkey or beef

  • 2 bacon strips, diced
  • 1 teaspoon finely chopped onion
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • TOMATO GRAVY:
  • 2 tablespoons chopped green pepper
  • 1 tablespoon chopped onion
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 to 2 bay leaves
  • 1 teaspoon sugar
  • 1/2 teaspoon celery salt
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons all-purpose flour
  • 1/2 cup water

Directions

  • In a large bowl, combine the beef, bacon, onion, salt and pepper.
  • Shape into four oval patties; brown in a skillet over medium heat.
  • Remove patties and keep warm.
  • Drain, reserving 1 tablespoon drippings. In the same skillet, saute
  • green pepper and onion in drippings until tender. Add the tomatoes,
  • bay leaves, sugar, celery salt, salt and pepper.

  • Combine flour and water until smooth; add to tomato mixture, stirring
  • constantly. Bring to a boil; cook and stir for 2 minutes or until
  • thickened.
  • Return patties to gravy. Reduce heat; cover and simmer for 30
  • minutes. Uncover; simmer 10 minutes longer. Discard bay leaves.
  • Yield: 4 servings.
