Ingredients

  • 1 pound ground beef
  • 2 Jones Dairy Farm Dry-Aged Bacon strips, diced
  • 1 teaspoon finely chopped onion
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • TOMATO GRAVY:
  • 2 tablespoons chopped green pepper
  • 1 tablespoon chopped onion
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 to 2 bay leaves
  • 1 teaspoon sugar
  • 1/2 teaspoon celery salt
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons all-purpose flour
  • 1/2 cup water

Directions

In a large bowl, combine the beef, bacon, onion, salt and pepper. Shape into four oval patties; brown in a skillet over medium heat. Remove patties and keep warm.
Drain, reserving 1 tablespoon drippings. In the same skillet, saute green pepper and onion in drippings until tender. Add the tomatoes, bay leaves, sugar, celery salt, salt and pepper.
Combine flour and water until smooth; add to tomato mixture, stirring constantly. Bring to a boil; cook and stir for 2 minutes or until thickened.
Return patties to gravy. Reduce heat; cover and simmer for 30 minutes. Uncover; simmer 10 minutes longer. Discard bay leaves. Yield: 4 servings.
