It takes no time to toss together the corn, lettuce and red peppers in my Corny Lettuce Salad. People love the sweet and tangy homemade dressing and the nutty crunch of poppy seeds. I've taken it to potlucks and picnics and it's gone in no time!

""Everyone loves this light, delicious salad! I make it just about every week for my family, always keeping extra dressing on hand in the fridge. I add sliced red peppers, cherry tomatoes, black beans, and red onions and top it with southwestern tortilla chips. People are always requesting the recipe when I bring it to a gathering.""

"Delighted to find such a delicious, refreshing salad. The directions said nothing about cooking the corn, so I didn't. It was yummy!"

"Fresh and vibrant. The dressing is easy to whip up and very sweet. I may use a bit less sugar next time. It was a great change from the regular salad."
