I've made this recipe for many years. Since my husband is diabetic, one-portion recipes work out well for us.—Elnora Johnson, Union City, Tennessee
TOTAL TIME: Prep: 20 min. + chilling YIELD:1 servings


  • 1/2 cup undrained canned crushed pineapple
  • 2 tablespoons lime gelatin
  • 1/4 cup 4% cottage cheese
  • 1/4 cup whipped topping


  • 1. In a small saucepan, bring pineapple to a boil. Remove from the heat and stir in gelatin until dissolved. Cool to room temperature. Stir in cottage cheese and whipped topping. Chill until set. Yield: 1 serving.

"I made this recipe years ago when I got this issue of Taste of Home for myself, and now I make it for my kids. They won't eat cottage cheese alone but they don't even notice it in the salad. I up the recipe to make a larger amount and it is worth it."
