Cool Lime Salad Recipe
I've made this recipe for many years. Since my husband is diabetic, one-portion recipes work out well for us.—Elnora Johnson, Union City, Tennessee
- 1/2 cup undrained canned crushed pineapple
- 2 tablespoons lime gelatin
- 1/4 cup 4% cottage cheese
- 1/4 cup whipped topping
- 1. In a small saucepan, bring pineapple to a boil. Remove from the heat and stir in gelatin until dissolved. Cool to room temperature. Stir in cottage cheese and whipped topping. Chill until set. Yield: 1 serving.
1 serving (1 each) equals 312 calories, 6 g fat (5 g saturated fat), 13 mg cholesterol, 266 mg sodium, 57 g carbohydrate, 1 g fiber, 10 g protein.
