This simple pie is so refreshing that it never lasts long on warm summer days. Watermelon and a few convenience items make it a delightful dessert that doesn't take much effort. —Velma Beck, Carlinville, Illinois

Ingredients

  • 1 package (3 ounces) watermelon gelatin
  • 1/4 cup boiling water
  • 1 carton (12 ounces) frozen whipped topping, thawed
  • 2 cups cubed seeded watermelon
  • 1 graham cracker crust (9 inches)

Directions

In a large bowl, dissolve gelatin in boiling water. Cool to room temperature. Whisk in whipped topping; fold in watermelon. Spoon into crust. Refrigerate for 2 hours or until set. Yield: 6-8 servings.

    "Have not made yet, but want to for Memorial day. Can you make fresh whipped cream instead of frozen whipped cream in carton? Family does not care for frozen. If can, will submit a review. Thank you."

    "Very good summertime dessert. I cut watermelon and put on paper towels in colander while I made rest of pie. I had one problem and that was the jello did not dissolve well with only 1/4 cup of boiling water. It stuck to the bowl and spoon. Any answers to this?"

    "Make you drain the watermelon WELL after dicing it. Place it into a colander to be sure all the extra juice is gone.

    Another important thing is to be SURE to cool the gelatin down completely before adding in your whipped topping or all you will get is SLUSH!
    The BEST gelatin to use, imo, is Jolly Rancher watermelon! It has the best flavor for this pie!
    This is a simple recipe that turns out WELL if you follow directions and will absolutely THRIL watermelon lovers in your family! It's delicious!"

    "This is the BEST pie ever for hot days of Summer. Followed the recipe exactly except used reduced fat graham cracker crust & light cool whip (dietary restrictions). Found the watermelon jello at Walmart, as other markets didn't carry it. It stayed in the fridge for a good 4 days. This is a keeper in my recipe file!

    "Very easy and refreshing....I cubed watermelon two hrs before...and put in bowl in refrigerator......so natural watermelon juices could be used instead of the water.....it added extra flavor.....a keeper for sure....cherry jello adds more flavor and color....my favorite....tastes excellent with cherries pitted and cut in half."
