I love guacamole! But I add beans to boost the amount of fiber in this version. It has a consistency similar to hummus and is perfect for dipping chips, pita or veggies. —Raquel Haggard, Edmond, Oklahoma
This dip is always a big hit with men—maybe because of the hearty blend of flavors. It stands up great as a leftover besides...if there's any left over.
I was raised on a Montana ranch, and my grandmother taught me to cook when I was 10 years old. My husband and I (we have one married daughter) are retired now. To stay active, I bowl and do crafts. My collection of cookbooks keeps right on growing, too—I started it more than 50 years ago.
My family and I enjoy eating this with tortilla chips, crackers and just about anything else we can find to dip into it—including our fingers!
We truly do live out in the country. Our area's so remote that we don't even have a telephone! My husband and I have four children, and I try lots of the recipes I find in Country Woman.
Among the 50 fruit trees on our place are five cherry trees—and I like to use every bit of fruit that doesn't get eaten right off of them! We enjoy salsa on a variety of dishes, especially leftovers (it really sparks them up) and eggs. I prefer this salsa most with turkey.
We have three boys—8,6 and 4—and a daughter who's 2. They keep me busy, since they're hungry all day!
In the kitchen, I'm always trying new things. It's rare for me to follow a recipe exactly. So, when something turns out good, my husband will a smile and say, "Do you think you'll be able to make it the same way next time?"
I prefer to prepare main dishes, but I do make desserts once in a while and appetizers for parties. This is a flavorful spread with a bit of zip. I've been making this for the holidays for over 15 years.—Wade Harmon, Orange, Massachusetts
The combination of flavors makes this dip very interesting as well as delicious. It's a challenge to not eat a lot while you're making it. I'm usually anxious for my guests to arrive so I can serve it and dig in!
As a cook for a commercial salmon fishing crew, I found this recipe to be a wonderful variation in the use of salmon. It's terrific as an addition to a festive Mexican meal or as a delicate prelude to a steak dinner.
