"Coleslaw is one of my husband's favorite side dishes," says Shirley Glaab from Hattiesburg, Mississippi. "We love this version because it's not as sweet as other slaws, but it's very colorful and the ingredients always make our mouths water."
“I was experimenting with Mexican-type dressings when I came up with this recipe,” recalls Betty Palmer from Paradise, California. “You can add chili beans or refried beans to make this salad more filling.”
I CAME up with this salad when an unexpected guest showed up for lunch and I had to "make do" with what was on hand. I thought it would complement my homemade ginger chicken soup, and it did!
It's a wonderful make-ahead salad and very attractive.

Dining alone? Try this colorful salad from Mary Lewis of Norman, Oklahoma. Refreshing mandarin oranges and a creamy citrus dressing complement tender cubes of chicken, pasta spirals, veggies and sliced red grapes. Truly, it's an entree in itself!
I CREATED this recipe because my family is so fond of corn. I tried to add a little zip to it with the marinade and I think I succeeded.
I double or triple the recipe for potlucks or when we have dinner guests. In either case, someone's always sure to ask for the recipe.

I keep cans of fruit in the refrigerator so they'll be cold whenever we want to be refreshed with this salad. My husband loves it. With a touch of mustard added, the dressing is also good over a green salad.
