If you like waffles and chocolate, this recipe is for you. These tender but crunchy waffles are great for breakfast, brunch or an after-dinner dessert. Instead of chocolate topping, top with berries and whipped cream or simply sprinkle with powdered sugar. —Agnes Golian, Garfield Heights, Ohio
Meet the Cook: With all the eggs our chickens produce, I could make this omelet every day! I guess I consider it to be mostly a festive dish, but you could fix it anytime...including for a light supper.
Growing up in a big family - seven children - of big eaters, I started cooking early. Now, I have a husband who likes to eat! We're the parents of one son, 8, and two daughters, 6 and 4.

THIS RECIPE was always one of my family's favorites, and it remains so for my husband and me.
When we plan a trip by car, I make the frittata the night before, stuff it into pita bread in the morning and microwave each one for a minute or two. Then I wrap them in a towel, and down the road an hour or so, we enjoy a still-warm breakfast!

Years ago, my grandson requested a special dish to be included in his class cookbook, and this is the recipe I gave him. It was his favorite whenever he ate at our house, so he was delighted.
I often still serve it as a side dish - it's a good complement to any entree.

Ann Schenk (at Left) of Winnett, Montana, has used the recipe for Pancakes for One for years. Originally it served six. "As our kids grew up and left home, I scaled down the recipe," Ann says. "Now if my husband, Mike, or I have a taste for these pancakes, it's easy to make just a few."
I FOUND this recipe among our old family favorites and adapted it to make a small amount. It's quick and easy to prepare, but we still consider it a special treat.
I make it for breakfast and to satisfy a sweet tooth. Topped with a fresh fruit sauce, it's a wonderful dessert!
-Eugene Presley, Council, Virginia
THIS RECIPE has a long tradition in our family. It was a special meal at my mother's table, and I enjoyed cooking it for my seven children. Now they prepare it for their families. I'm glad this recipe was easy to adjust for just the two of us. My wife and I enjoy it two or three times a week.
-James Newton, Minocqua, Wisconsin
We discovered this recipe in Mexico. We couldn't figure out what made this French toast so delicious until we learned the secret was vanilla—one of Mexico's most popular flavorings. Since then, we've added a touch of vanilla to our waffle and pancake recipes. It makes them all very tasty. —Joe and Bobbi Schott, Castroville, Texas
I'VE HAD this recipe for years. It's economical to make, yet results in a delicious cookie.
At Christmastime, I invite my grandchildren to join me - it makes a simple baking experience for them. They especially like sprinkling the powdered sugar on top...and the taste-testing afterward!
