Reviews for Contest-Winning Broccoli Chicken Casserole
"We thoroughly enjoyed this recipe and I definitely plan to make it again. I started by following the recipe, but realized that I only had a 9 x 13 pan and not an 11 x 7. So I added some frozen mixed veggies, a little milk, and some frozen pearl onions. Otherwise I stuck to the recipe. My husband and I both really liked this recipe and the only thing my husband said he would change is to add some french fried onions on top! I also love that I made this recipe, other than baking it, two days ahead of time and refrigerated it. Still turned out delicious. Another great one!"
"This was the worse recipe I have ever made from Taste of Home, I don't know where I went wrong, but it sure sipped through a straw. Will never make it again, stick to what I know is good."
"Similar to a recipe I have had for years. I mix a can of cream soup (chicken or celery), 1/4-1/2 cup milk and 8 oz. Velveeta cut into cubes and I microwave them, stirring every minute or so, until cheese is melted. Stir in cut up chicken, pour into greased pan, layer chopped broccoli on top then the prepared stuffing mix (made with broth). Cover & bake 20 min., uncover and bake 10-15 min. more until stuffing is lightly browned. I sometimes add a 1/4 c. chopped, sauteed onion and some ground sage."
"Very family friendly and quick. Used cream of mushroom soup and baked chicken mixture 15 minutes before adding stuffing. Made stuffing according to package, put on top of chicken , covered with foil (we don't like crunchy stuffing) and baked an additional 30 minutes. Smelled so good we never got around to adding the cheese!"
"Simple and delicious. I like to use smoked chicken or turkey."
"Delicious and easy dinner! I also like its versatility, if you have a particular vegetable or soup on hand, you can switch it up. I had some of my Cheddar Mashed in the freezer, so I layered them in the bottom. I used corn instead of broccoli, well because I like corn better, and condensed chicken soup. I cooked it longer than the directions and didn't add cheese because I didn't want to de-crunchify the stuffing. Next time I make I'm going to try adding onion soup mix to the mixture and top with the cheese before the stuffing. I also think French fried onions on top would be delicious. Thank you for the recipe!??"
"This was really good and easy!! Will definitely make again."
"I have made a very similar casserole for YEARS with the exception of using "raw" bone-in chicken thighs and fresh portions of a broccoli crown & add quartered (or smaller) potatoes-- actually just made to take to some folks at Church who need a bit of help. I like adding small can of sliced mushrooms on top of the soup and use chicken broth to make the stuffing. Grate up Swiss cheese for on top of mushrooms and over stuffing -- probably 2-3 cups total (we like cheese). Obviously, cook longer like 45 (or more) minutes at 350 depending on stove! Also, made without stuffing and served over rice. AND naturally season to your own taste!"
"I liked this recipe but I changed the ingredients and I call my creation stuffing surprise I cut up celery and carrots I saute them in a pan until they're translucent I add canned pees ,and your cut up chicken, cream of celery soup 2 to 3 Can's undiluted don't add water then add your stuffing bake covered for 20 minutes at 350' bake 10 to 15 minutes longer uncovered or until heated through !!!!(STUFFING SURPRISE)????????"
"I made this when my family was over. No leftovers! My 3 yr. old grandson even asked for seconds! We will definitely have this again."
"very bland tasting needs seasonings. Perhaps sage or something."
"Loved it exactly the way it was submitted, will make it often. thanks, Jennifer"
"My three year old said, "This is the best mom!" Will be making again for sure. Super easy to put together which is great when you need dinner on the table in a flash!"
"This dish was 'ok' the first time I made it, when I followed the original recipe. The next time I made it, I used a can of lighter "Cream of chicken soup" (since there was already broccoli in this recipe). I also added chopped Italian parsley, a small diced onion, a sprinkle of garlic powder, and a small jar of (drained) mushroom stems & pieces. This was exceptionally delicious....the second time around :-) Also, the boxed stuffing mix definitely needed a good amount of tweaking, since lately.... they seem to have cut down on the herbs ."
"This is similar to a recipe I have. In mine, you layer a large baking dish with chicken Rice-A-Roni (prepared), 3-4 chicken breasts cooked and cubed, top with a layer of cooked broccoli (I use a 32-oz frozen bag). Then I pour this sauce over it: 1 can cream of chicken soup (not prepared), using the empty soup can, 1/2 can of milk, 1/2 can of mayo, 2 tsp of curry powder (or as much as you want for taste), and 8 oz. of cheddar cheese. Bake for 30-35 minutes. About 10 minutes before done, I top with croutons."
"This is a delicious recipe. It's on the same idea as a chicken Broccoli Divan Recipe Campbell's had a while back, I lost it. This is very good! I added extra broccoli but we love broccoli here."
"This recipe received five stars for the ease of preparation compared to taste. My husband and I both thought this was a yummy weeknight meal. IT's hard to accurately rate a recipe when you make modifications, but that is what I did based on other reviewers' suggestions. I made the stuffing with chicken broth and saut?ed onions in butter to add to the mix. I also added roasted garlic powder, celery seed and sage to the stuffing. I used Cream of Broccoli as this was all I had in the house and doubled the broccoli. This made about 4 moderate sized servings. Very quick and easy to make. We will be making this again on a busy weeknight."
"Easy make ahead dish"
"I made this on a whim because I was pressed for time and had all the ingredients. I added about 1-1/2 cups of leftover mashed potatoes in the casserole dish first as suggested by another reviewer and then the rest of the ingredients on top. I didn't use any cheese, though. My SO actually liked it, even with the broccoli, and actually ate leftovers the next day (unheard of!) I will definitely make again and again. Thank you for submitting."
"I love this recipe I added a layer of mashed potatoes we had left over in a layer on the bottom of my dish, then topped it with this mixture it was a huge hit with the family!"
"Very delicious however the next time I make it, I will add the cheese during the last few minutes of baking."
"I made this lastnight and it got good reviews. I doubled the recipe and used 1 can Cream of chicken soup, 1 can of Cream of Mushroom soup, 1 cup Sour cream (light). I put 2 bags of chopped brocolli steamers in the Micro for 7 min. before combining with other ingredients. I put 1 c. Cheddar cheese directly on top of the broccoli, chicken mix and then spread the stuffing mix on top. I used 2 packages and made it with chicken broth. Baked at 350 for 30 minutes covered with foil and then 15 min. uncovered. Cheese was bubbly and stuffing slightly crispy on top. Even my 3 yr. old grandson liked it."
"I also used 2 c. Broccoli and just a sprinkling of cheddar on top. Very tasty and easy. Good weekday quick dinner"
"Very good but I would omit the 4 oz of shredded cheddar cheese on the top next time. It made a sort of 'layer' and took away from the broccoli and chicken flavors. Otherwise was delicious!"
"Delicious! I roasted split chicken breasts to add to this recipe. The flavors are fantastic. I added French fried onion rings for added flavor and put the cheese into the mixture. I also added a can of cream of chicken soup for a creamier texture. In the final 5 minutes of cooking, I added a top layer of French fried onions. I actually have to make this once a month. I literally crave it."
"This was quick, easy, and soooooo tasty!!!!"
"I made this last night and it was a big hit with the family. I used the recipe as a base and then added the following ingredients based on previous reviews: 8 oz. fresh mushrooms, 1/2 medium onion and a rib of celery all chopped and sauteed in 2 tbls. butter. 1 more cup of frozen broccoli, and 1/2 cup chicken broth. I used a 9 x 13 inch baking dish and baked for 30 minutes covered and then uncovered and baked an additional 20 minutes uncovered. We did not think the dish was too salty at all. This recipe is definitely a keeper! Thanks!"
"Quick and pretty good."
"Very good, easy and fast to put together."
"Amazing! I cooked the chicken with some salt, pepper and garlic powder. I also put in more pepper in the broccoli mixture with half an onion. Really easy to make!"
"Way too salty! Will try it again, but will make my own stuffing. I also added more broccoli."
"Loved it as written, but have tweaked it a bit since: I double the recipe, except -I half cook a bag of steamer broccoli (three cups) (easy prep and more veggies), I only use one box of stuffing (less carbs, but the same amount of flavor), I use the 98% fat free soup, and I wing the amount of cheddar cheese."
"Delish! Love this recipe but it barely made enough for the 3 of us. Will double it next time!"
"This was so easy to make and really delicious! My super picky daughter wouldn't eat it, but the rest of us liked it a lot!"
"Not only is it a great way to use leftover turkey, it's also a great way to get rid of extra Thanksgiving stuffing. Our turkey supply gave out before our stuffing and this recipe was easy to substitute into. We also used cream of mushroom soup as the broccoli cheddar wasn't available. Still tasted fine."
"Delish!! I made just as the recipe states :)"
"I usually add 1/4 cup each of finely diced celery and onion to this. Also 1/2 cup extra shredded cheese to the mixture along with a couple of tbs of white wine. You can substitute peas and or carrots for the broccoli. The portion size is way off though. If not fixing a large salad to go along with it then then the recipe makes enough for the 2 of us and we are satisfied with the nice large portion size."
"This sounds like a great way to get rid of leftover turkey, can't wait."
"This is a great recipe but after reading the reviews, I added some diced onions, 1 cup of sour cream, pepper and made the stuffing with chicken broth instead of water. I also added a little more broccoli than the recipe called for but the basic recipe is very good. I'm glad to have read the previous reviews and I did think the basic recipe was slightly bland."
"This is a great meal for a busy person. I used cream of celery soup because I did not have broccoli cheese on hand, but it was still very tasty."
"Years ago my friend and I served lunch on weekdays and dinner on Saturday in a bar in Greenwich Village, NYC. This recipe was hers - including a number of improvements which address the concerns of dccookin' and some others. Here they are:Saute 8oz. sliced mushrooms in butter and add to soup, along with a cup sour cream. We didn't use cheddar cheese, but sprinkled the top of the stuffing with chicken broth.I make this for parties and it is always a big hit. These additions make it a 5 star recipe."
"Made it with leftover turkey (cooked mine before Thanksgiving this year!) and really liked the whole thing. I did use sharp cheddar."
"I will try this. Looks easy and quick. One peeve of mine, however, is the number of different-sized bake ware that people must have in their kitchens; 11x7? Since this amounts to 77 sq. in., I'm guessing that a 9x9 (81 sq. in.) would work. Another one is running into recipes where the ingredients list includes the sizes of cans that no longer can be found in stores. Updating recipes seems to be in order. - newer "kitchen user""
"I have made this before and I love it but lost my recipe thanks for putting it on here"
"This was pretty good. I did take the advise of previous reviewers and added 2 cans of soup. My children enjoyed it."
"My son said it was pretty good. That means he liked it and cook it again. Added more cheese."
"So easy and so delicious! I used fresh broccoli that I cooked ahead of time. Made half the recipe and it was enough to serve 4 people generously. Will definitely fix again."
"This recipe was very easy & cheap to make, but the best part was that is tasted good! I think I would put it at more of a 3 1/2 star & my husband said kind of a low 4 star...lol So...it was good, not sensational, but I will definitely make it again."
"Next time I would put the stuffing on top otherwise it's a great wintertime combination... yum!"
"My Dad loved this and asked me to make again"
"Didn't really care for this recipe."
"I only had a box of cranberry stuffing, but it came out wonderful!! Leftovers are great too! Next time I make this recipe, I will add maybe 1/4 cup crasins if I cant find cranberry stuffing (I think its only available during holidays)."
"awesome, great way to use leftover chicken"
"Just like everyone else said - quick, easy, delicious. Will definitely make again. Nice combination of flavors and textures, and filling. Would consider using 2 cans soup next time, though don't need to."
"We all enjoyed this alot (the stuffing gives lots of flavor) however I love the rice aspect so I made a side serving of chicken rice & instead of frozen brocolli, I used fresh & put crushed crackers ontop.yum!"
"A bit too dry - tasted like it was missing something. Disappointing."
"I would add more broccoli to it! But it was delicious!"
"This is one of our favorites. I use low-sodium stuffing mix and cheddar cheese soup. Yum!"
"Just made this for my preschoolers and my husband and they all loved it!!! It was super easy to prepare and to clean up too!"
"Very simple, fast and delicious. A good stand by for a good, fast weeknight meal."
"Just as tasty as it is simple. I seasoned the chicken with lemon pepper and a dash of creole seasoning for some added flavor. It was a hit!"
"Very simple, and relatively cheap to make, good for a beginner. I use fresh broccoli instead of frozen and it's a huge hit every time."
"I forgot to defrost my chicken, so I used an already baked chicken that you can purchase at most markets. Since I doubled the recipe, I used one can of cream of broccoli soup and one can of cheddar cheese soup since I couldn't find a broccoli cheese stand-alone soup. I would definitely make this one again, although I had my sister and her daughter stop by to eat. My niece doesn't like broccoli or cheddar cheese.. she's VERY picky."
"It was delicious! I used the Broccoli & Cheese Steamers!"
"Made this recently and even my husband said he liked it. I doubled everything except for the stuffing for added moisture and since we usually aren't that big on stuffing. Turned out really well, I will definitely be making this dish again."
"This is such a deliciously simple recipe. I use the low-sodium Stove Top Stuffing mix."
"I actually baked this in an 8 x 8 dish. It seemed to turn out much better when baked this way."
"My family enjoyed this recipe very much. I doubled it and baked in a 9 X 13...I would, however, add 3 cans of soup for added moisture. Good Recipe!"
"We really enjoyed this recipe. Even the leftovers were delicious!"
"My daughter is a real "casserole" kind of girl, and when she saw this on the web site, she wanted me to make it, and I'm glad I did! I only had a large can of chicken on hand, so that's what I used. I also used the 98% fat free soup, and low fat cheese. I probably won't use the low fat cheese again, but I would do everything the same. My husband has already asked when I'll be making it again! Thank you so much!!"
"very good. i used regular cheddar soup because i was out of broc ched...still good. and easy to make:0)"
"Mixed in a 1/2 to 1 tsp of curry powder into the soup mix. Yum!"
"This was a lot better than I thought it was going to be. Pretty tasty!"
"I love this recipe have made it many, many times. Have even substituted turkey after Thanksgiving and it rocks"
"I made this last night for dinner & the my husband and all 3 boys loved it!!! I think this will be a new family favorite!"
"Very tasty, even though I realized at the last minute that I did not have a 7" x 10" pan. It DID matter, unfortunately, but the casserole still tasted good."
"This recipe is a favorite in my recipe box. Why? Because it is so easy to throw together. I also like how the cheese gets a little crunchy on top of the stuffing."
"To make this more flavorful, my family loves it when I add a tablespoon of curry powder. Spicy but not hot."
"Tastes great and so easy to make. Total time: 40 minutes from start to finish."
"This is very simple to make & very tasty. I added the 4 tablespoons of butter to the stuffing mix like it says on the box. I also added an extra cup of montery jack cheese. Next time i might make this with corn because my kids like that better than broccoli."
"Served this dish with rotisserie chicken and a dollop of sour cream...my family and friends loved it!"
"used cream of chicken rather than cream of broccoli but still wonderful"
"It make a quick & easy Sunday night dinner."
"used ground turkey added long grain and wild rice added onion and on very top used panko bread crumb for chrunch"
"Did not like it either!!!! Very blah!"
"Did not like one bit."
"great tasting easy recipe my kids love it. I didn't have shredded cheese so I subsituted velveeta box cheese cut into cubes makes it a little creamier"
"Not bad at all. I especially liked the dressing on top"
"Very simple dish, good flavour. Easy to add or substitute ingredients, too."
"My husband is a very*** picky eater so I wasn't sure how this would go over, but he LOVED it and even asked for me to make it again sometime soon. We live over seas so I had to buy cream of broccoli soup and cheddar cheese soup separately and then combine them, I also used chicken broth instead of water which made the stuffing extra moist."
"Very good and easy!"
