Contest-Winning Broccoli Chicken Casserole Recipe
- 1 package (6 ounces) chicken stuffing mix
- 2 cups cubed cooked chicken
- 1 cup frozen broccoli florets, thawed
- 1 can (10-3/4 ounces) condensed broccoli cheese soup, undiluted
- 1 cup (4 ounces) shredded cheddar cheese
- 1. Preheat oven to 350°. Prepare stuffing mix according to package directions, using 1-1/2 cups water.
In large bowl, combine chicken, broccoli and soup; transfer to a greased 11x7-in. baking dish. Top with stuffing; sprinkle with cheese. Bake, covered, 20 minutes. Uncover; bake 10-15 minutes longer or until heated through.
Freeze option: Transfer individual portions of cooled casserole to freezer containers; freeze. To use, partially thaw in refrigerator overnight. Transfer to a microwave-safe dish and microwave, covered, on high until a thermometer inserted in center reads 165°, stirring occasionally and adding a little broth if necessary. Yield: 6 servings.
1-1/3 cups: 315 calories, 13g fat (6g saturated fat), 66mg cholesterol, 1025mg sodium, 25g carbohydrate (4g sugars, 2g fiber), 23g protein.

"Similar to a recipe I have had for years. I mix a can of cream soup (chicken or celery), 1/4-1/2 cup milk and 8 oz. Velveeta cut into cubes and I microwave them, stirring every minute or so, until cheese is melted. Stir in cut up chicken, pour into greased pan, layer chopped broccoli on top then the prepared stuffing mix (made with broth). Cover & bake 20 min., uncover and bake 10-15 min. more until stuffing is lightly browned. I sometimes add a 1/4 c. chopped, sauteed onion and some ground sage."
"Very family friendly and quick. Used cream of mushroom soup and baked chicken mixture 15 minutes before adding stuffing. Made stuffing according to package, put on top of chicken , covered with foil (we don't like crunchy stuffing) and baked an additional 30 minutes. I had some of my Cheddar Mashed in the freezer, so I layered them in the bottom. I used corn instead of broccoli, well because I like corn better, and condensed chicken soup. I cooked it longer than the directions and didn't add cheese because I didn't want to de-crunchify the stuffing. Next time I make I'm going to try adding onion soup mix to the mixture and top with the cheese before the stuffing. I also think French fried onions on top would be delicious. "I have made a very similar casserole for YEARS with the exception of using "raw" bone-in chicken thighs and fresh portions of a broccoli crown & add quartered (or smaller) potatoes-- actually just made to take to some folks at Church who need a bit of help. I like adding small can of sliced mushrooms on top of the soup and use chicken broth to make the stuffing. Grate up Swiss cheese for on top of mushrooms and over stuffing -- probably 2-3 cups total (we like cheese). Obviously, cook longer like 45 (or more) minutes at 350 depending on stove! Also, made without stuffing and served over rice. AND naturally season to your own taste!"
"I liked this recipe but I changed the ingredients and I call my creation stuffing surprise I cut up celery and carrots I saute them in a pan until they're translucent I add canned pees ,and your cut up chicken, cream of celery soup 2 to 3 Can's undiluted don't add water then add your stuffing bake covered for 20 minutes at 350' bake 10 to 15 minutes longer uncovered or until heated through !!!!(STUFFING SURPRISE)????????"

"This dish was 'ok' the first time I made it, when I followed the original recipe. The next time I made it, I used a can of lighter "Cream of chicken Soup" (since there was already broccoli in this recipe). I also added chopped Italian parsley, a small diced onion, a sprinkle of garlic powder, and a small jar of (drained) mushroom stems & pieces. This was exceptionally delicious....the second time around :-) Also, the boxed stuffing mix definitely needed a good amount of tweaking, since lately.... they seem to have cut down on the herbs ."
"This is similar to a recipe I have. In mine, you layer a large baking dish with chicken Rice-A-Roni (prepared), 3-4 chicken breasts cooked and cubed, top with a layer of cooked broccoli (I use a 32-oz frozen bag). Then I pour this sauce over it: 1 can cream of chicken soup (not prepared), using the empty soup can, 1/2 can of milk, 1/2 can of mayo, 2 tsp of curry powder (or as much as you want for taste), and 8 oz. of cheddar cheese. Bake for 30-35 minutes. About 10 minutes before done, I top with croutons."

IT's hard to accurately rate a recipe when you make modifications, but that is what I did based on other reviewers' suggestions. I made the stuffing with chicken broth and saut?ed onions in butter to add to the mix. I also added roasted garlic powder, celery seed and sage to the stuffing. I used Cream of Broccoli as this was all I had in the house and doubled the broccoli. This made about 4 moderate sized servings. Very quick and easy to make. "I made this on a whim because I was pressed for time and had all the ingredients. I added about 1-1/2 cups of leftover mashed potatoes in the casserole dish first as suggested by another reviewer and then the rest of the ingredients on top. I didn't use any cheese, though. "I made this lastnight and it got good reviews. I doubled the recipe and used 1 can Cream of chicken soup, 1 can of Cream of Mushroom soup, 1 cup Sour cream (light). I put 2 bags of chopped brocolli steamers in the Micro for 7 min. before combining with other ingredients. I put 1 c. Cheddar cheese directly on top of the broccoli, chicken mix and then spread the stuffing mix on top. I used 2 packages and made it with chicken broth. I used a 9 x 13 inch baking dish and baked for 30 minutes covered and then uncovered and baked an additional 20 minutes uncovered. We did not think the dish was too salty at all. "I usually add 1/4 cup each of finely diced celery and onion to this. Also 1/2 cup extra shredded cheese to the mixture along with a couple of tbs of white wine. You can substitute peas and or carrots for the broccoli. The portion size is way off though. If not fixing a large salad to go along with it then then the recipe makes enough for the 2 of us and we are satisfied with the nice large portion size."
