MAKES: 12 servings

Ingredients

  • 6 egg yolks
  • 1 cup sugar
  • 1/3 cup cold water
  • 6 egg whites
  • 1 teasp. vanilla
  • 2 teasp. baking powder
  • 1 1/3 cup cake flour- sifted
  • Custard
  • 2 cups milk
  • 1/3 cup cornstarch
  • 1/3 cup sugar
  • 1 beaten egg
  • 1 teasp. vanilla
  • 1/2 lb butter
  • 1 cup powdered sugar

Directions

  1. Beat egg yolks well. Add 3/4 cup sugar gradually. Add flour and baking powder alternately with water. Add vanilla. Beat egg whites,add 1/4 cup sugar, andthen Fold into the egg yolk mixture. Bake in three 9 inch layer tins at 350 degrees about 15-20 mins. Do not grease tins. Invert pans to cool.
  2. Custard-
  3. Cook Milk, cornstarch, sugar beaten egg and vanilla. until thick. Beat till cool. Then beat 1/2 lb butter, add 1 cup powdered sugar, a little at a time. When custard is cool, add butter mixture. Frost and fill the cake layers. Top cake and sides with toasted coconut. Yield: serves 12
