Shrimp & Gravy over Rice

TOTAL TIME: Prep: 10 min. Cook: 30 min. YIELD: 6 servings
This recipe is special to me because, it was 1 of my Mother's favorite. I lost her to cancer 2 years ago. Everyone she fix this for, fell in love with it instantly.

Ingredients

1 lb. uncooked shrimp
1 onions
1 bell pepper
1 shredded carrot
1 sliced tomato
1 cup flour
2 cups water
olive oil
1 box rice (uncle ben's)

Directions

Drizzle olive oil in saucepan. Saute onions, bell pepper, carrot, & tomato. When mixture is soft add shrimp and stir occasionally until shrimp is pink. Sprinkle flour over then add water to make gravy, while stirring. Let simmer for 5 minutes. Serve over cooked rice.
