This recipe is special to me because, it was 1 of my Mother's favorite. I lost her to cancer 2 years ago. Everyone she fix this for, fell in love with it instantly.
- 1 lb. uncooked shrimp
- 1 onions
- 1 bell pepper
- 1 shredded carrot
- 1 sliced tomato
- 1 cup flour
- 2 cups water
- olive oil
- 1 box rice (uncle ben's)
- Drizzle olive oil in saucepan. Saute onions, bell pepper, carrot, & tomato. When mixture is soft add shrimp and stir occasionally until shrimp is pink. Sprinkle flour over then add water to make gravy, while stirring. Let simmer for 5 minutes. Serve over cooked rice. Yield: serves 6
