This red velvet log is moist and soft and oh so good
- For the cake: 1/3 cup of flour 1/3 cup of sifted unsweetened cocoa 2 TBs of cornstarch 1/2 tsp baking soda 1/2 tsp baking powder 1/3 tsp salt 4 large eggs, separted 1 cup of sugar,divided 1 tbs red velvet flavoring confectioners sugar Filling: 12oz. cream cheese 2 cups of powerded sugar 1 tsp. clear vanilla 1/2 cup softened butter
- In a medium bowl combine flour,cocoa,cornstarch,baking soda,baking powder and salt. Mix well. In a separte bowl using an electric mixer set in medium beat the egg yolks and 1/4 cup of sugar until fluffy. Clean the beaters. Beat the egg whites on high until foamy ,adding 1/2 cup of sugar Beat until stiff and peak forms. Fold 1/3 beaten egg whites into the yolk mixture. Alternately fold in the remaining whites with the flour mixture. Add the red velvet flavoring. Pour the batter into a 10x13 pan sprayed on the sides. You should have paper on the bottom of the pan. Bake for 15 mintues So not over bake. While the cake is baking mix the filling until smooth. When the cake comes out of the oven dump out of the pan on a sugared board Remove the pan liner Spread the cheese filling over you cake Roll tight into a log and sprinkle with powered sugar. Yield: serves 10
