My hubby and I love to grill! Even if it's below zero, every weekend is grill time for us. We have learned how to grill everything from fresh veggies to meats, fish and seafood to breads and desserts. Since potatoes are a staple in our home, it was a natural move to create a recipe to grill them! Here's what we came up with...

Ingredients

4 medium red potatoes quartered
1 red onion, quartered
1/2 cup balsamic vinegar
1/4 cup extra virgin olive oil
1 tbsp. fresh basil
1 tbsp. fresh oregano
1 tsp. minced fresh garlic
salt & cracked pepper to taste

Directions

Parboil or microwave quartered potatoes until almost done and easily pricked with fork. Combine all remaining ingredients in large ziptop bag. Add potatoes. Let marinate a few hours or for best results, overnight. Drain marinade and place in a foil lined grill basket. Place on grill for about 15 minutes or until potatoes are golden brown. Serve with a sprinkle more fresh herbs. *If you do not have a grill, these can also be roasted in your oven uncovered at 425 until golden. To get the grilled flavor, add 1/4 tsp. liquid smoke. *
